Ingredients
about 3 passion fruit
1/4 cup (80ml)
honey
400ml low-fat
yogurt
2 teaspoons
gelatin
1 tablespoon
water
2 egg whites
1/4 cup (80ml)
passion fruit pulp
Method:
Combine
honey and yogurt in medium bowl. Sprinkle
gelatin over water in cup, stand in small
pan of simmering water, stir until
dissolved; stir into yogurt mixture. Spread
mixture into 20 x 30cm lamington pan, cover
with foil, freeze until firm.
Chop yogurt
mixture; beat in small bowl with electric mixer
until mixture thickens and doubles in size, transfer
to large bowl.
Beat egg whites
in clean small bowl with electric mixer until firm
peaks form. Gently fold egg whites and passion fruit
pulp into yogurt mixture. Pour into lamington pan,
cover, freeze until firm.
