Healthy Desserts Recipes - Summer Berry Clafoutis

Ingredients

  • cooking oil spray

  • 200g boysenberries

  • 200g blackberries

  • 150g raspberries

  • 100g blueberries

  • 3 eggs

  • 1/3 cup (75g) caster sugar

  • 1 teaspoon vanilla essence

  • 1/3 cup (50g) plain flour

  • 1 tablespoon self-raising flour

  • 3/4 cup (180ml) skim milk


Method:

  1. Coat four 1 3/4-CUP (430ml) shallow ovenproof dishes with cooking oil spray; place on oven tray. Divide berries among dishes.

  2. Whisk eggs, sugar and essence in medium bowl until frothy; whisk in sifted flours and milk, until just combined. Pour mixture, over back of spoon, into dishes.

  3. Bake, uncovered, in moderate oven about 35 minutes or until clafoutis are set. Serve warm; dusted with sifted icing sugar, if desired.
