Coat four 1
3/4-CUP (430ml) shallow ovenproof dishes
with cooking oil spray; place on oven tray. Divide
berries among dishes.
Whisk eggs, sugar
and essence in medium bowl until frothy; whisk in
sifted flours and milk, until just combined. Pour
mixture, over back of spoon, into dishes.
Bake, uncovered,
in moderate oven about 35 minutes or until clafoutis
are set. Serve warm; dusted with sifted icing sugar,
if desired.
