3/4 cup (180ml)
light evaporated milk, well chilled
3 teaspoons
gelatin
1/4 cup (80ml)
water
250g strawberries
Method:
Combine sugar
and 1/4 cup (60ml) of the milk in small pan, stir
over heat, without boiling, until sugar dissolves.
Sprinkle gelatin over water in cup, stand in small
pan of simmering water, stir until dissolved; stir
into milk mixture.
Blend or process
strawberries until smooth, stir into milk mixture.
Transfer mixture to medium bowl; refrigerate until
almost set.
Beat remaining
milk in medium bowl with electric mixer until thick
and creamy (do not over beat). Beat strawberry
mixture with electric mixer until thick and creamy,
gently fold both mixtures together.
Pour into 4
dessert glasses; refrigerate until set. Serve with
extra strawberries, if desired. Dusted with a little
sifted icing sugar.
