Healthy Desserts Recipes - Strawberries and Passion Fruit with Meringue

Ingredients

• about 3 passion fruit

• 500g strawberries, halved

• 2 egg whites

• 1/3 cup (75g) caster sugar

passion fruit sauce

• 1/2 cup (125ml) water

• 1/4 cup (80ml) passion fruit pulp

• 2 tablespoons caster sugar

• 3 teaspoons corn flour

Method:

1. Pour Passion fruit Sauce onto four heatproof plates. Arrange strawberries in a single layer on top of sauce.

2. Beat egg whites in small bowl with electric mixer until soft peaks form, gradually add sugar, beating until dissolved between additions. Spoon meringue mixture over strawberries; grill until meringue is browned lightly.

3. To make Passion fruit Sauce: Combine all ingredients in small pan, stir over heat until sauce boils and thickens. Strain sauce; return a few of the seeds to sauce.
