Healthy Desserts Recipes - Spiced Rhubarb Tart
Ingredients

3/4 cup (150g)
low-fat ricotta cheese, sieved

1 tablespoon
finely grated orange rind

1 teaspoon ground
cinnamon
-
1 egg yolk
-
1 tablespoon
caster sugar

4 sheets fillo pastry cooking oil spray
rhubarb topping

5 cups (550g)
chopped fresh rhubarb
-
1/2 small (65g)
apple, peeled, chopped

1 teaspoon finely
grated fresh ginger
-
1/3 cup (75g)
caster sugar
Method:

Combine
cheese, rind, cinnamon, egg yolk and sugar
in medium bowl. Cut pastry sheets in half;
layer pastry sheets together, coating every
second sheet with cooking oil spray. Cut
24cm round from layered pastry; cut
decorative shapes from pastry scraps, if
desired.

Place pastry
round on oven tray which has been coated with
cooking oil spray; spread cheese mixture evenly over
base, leaving 3cm border.

Bake, uncovered,
in moderate oven about 20 minutes or until cheese
mixture is set. Spread Rhubarb Topping over base;
decorate with pastry shapes.

Bake, uncovered,
in moderate oven about 25 minutes or until firm.
Serve dusted with a little sifted icing sugar, if
desired.

To make Rhubarb Topping:
Combine rhubarb, apple, ginger and sugar in large
pan, stir over heat, until sugar dissolves. Cook,
uncovered, stirring occasionally, about 15 minutes
or until mixture is thick.
