Healthy Desserts Recipes - Rosehip Pears with Redcurrant Sauce  

Ingredients

  • 4 medium (900g) firm ripe pears

  • 1.5 liters (6 cups) water

  • 8 rosehip tea bags

redcurrant sauce

  • 1/2 cup (125ml) dry red wine

  • 1/2 cup (125ml) redcurrant jelly

  • 1 1/2 tablespoons corn flour


Method:

  1. Peel pears, leaving stems intact. Trim base of pears so they sit flat. Place pears in deep pan, add water and tea bags, bring to boil; simmer, covered, about 25 minutes or until pears are tender.

  2. Cool pears in liquid; reserve 3/4 cup (180ml) of cooking liquid for sauce. Serve drained pears with Redcurrant Sauce and low-fat yogurt topped with toasted slivered almonds, if desired.

  3. To make Redcurrant Sauce: Combine wine, jelly, corn flour and reserved cooking liquid in medium pan, stir over heat until sauce boils and thickens; cool.
