Healthy Desserts Recipes - Ricotta Pancakes

Ingredients

  • 1 cup (150g) white self-raising flour

  • 1 cup (160g) whole meal self-raising flour

  • 1/3 cup (75g) caster sugar

  • 1 cup 200g) 2low-fat ricotta cheese

  • 1 1/2 cups (375ml) skim milk

  • 2 egg whites

  • cooking oil spray

  • 1/2 cup (125ml) maple-flavored syrup

  • 1 liter low-fat vanilla ice-cream


Method:

  1. Sift flours and sugar into large bowl, whisk in cheese and milk. beat egg whites in small bowl with electric mixer until soft peaks form, fold into ricotta mixture.

  2. Drop 1/2 cup (125ml) of batter into heated non-stick pan which has been coats with cooking oil spray, spread into 14cm round; cook about 2 ,minutes or until browned underneath.

  3. Turn pancake, brown other side. Repeat with remaining batter. You will need 8 pancakes for this recipe.

  4. Serve pancakes with maple syrup and ice-cream; top with fresh berries, if desired.
