Healthy Desserts Recipes - Rice Pudding with Sultanas

Ingredients

  • cooking oil spray

  • 1/2 cup (100g) white short-grain rice

  • 2 1/2 cups (625ml) skim milk

  • 1/4 cup (55g) caster sugar

  • 2 tablespoons sultanas

  • 1 teaspoon vanilla essence

  • 2 teaspoons soft butter

  • grated nutmeg


Method:

  1. Coat 1-litre (4-cup) shallow ovenproof dish with cooking oil spray, Wash rice well under cold water; drain.

  2. Combine rice, milk, sugar, sultanas and essence in prepared dish, mix lightly with a fork. Top with butter, sprinkle with nutmeg.

  3. Bake, uncovered, in moderately slow oven about 2 hours or until most of the milk has been absorbed. Serve warm or cold with fresh or poached fruit, if desired.
