Healthy Desserts Recipes - Plum and Apple Strudel with Vanilla Yoghurt

Ingredients

  • 2 large (400g) apples, peeled, cored

  • 825g can dark plums in syrup, drained

  • 2 teaspoons finely grated lemon rind

  • 1/3 cup (75g) firmly packed brown sugar

  • 1/4 cup (60ml) maple-flavored syrup

  • 1/4 cup (60ml) water

  • 1 cinnamon stick

  • 1/2 cup (60g) almond meal

  • 6 sheets fillo pastry cooking oil spray

vanilla yogurt

  • 1/3 cup (80ml) skim milk

  • 3/4 cup (180ml) low-fat yogurt

  • 2 teaspoons vanilla essence

  • 1/4 cup (40g) icing sugar mixture


Method:

  1. Cut each apple into 12 pieces. Halve plums, discard stones. Combine apple, rind, sugar, maple syrup, water and cinnamon in large pan, stir over heat, without boiling, until sugar dissolves.

  2. Bring to boil; simmer, uncovered, 10 minutes or until apple is just tender, stirring occasionally. Drain apple mixture, discard cinnamon and syrup; cool. Combine apple, plums and almond meal in bowl; mix gently.

  3. Layer pastry sheets together, coating every second sheet with cooking oil spray. Spoon apple mixture along long edge of pastry, leaving 8cm border at each end. Roll up strudel, tucking in ends, while rolling; coat lightly with cooking oil spray.

  4. Place strudel on oven tray which has been coated with cooking oil spray, bake, uncovered, in moderate oven about 30 minutes or until browned.

  5. Serve dusted with sifted icing sugar and candied lemon rind, if desired. Serve with Vanilla Yogurt.

  6. To make Vanilla Yogurt: Combine all ingredients in medium bowl.
