Healthy Desserts Recipes - Plum and Apple Cobbler
Ingredients

825g can dark
plums in syrup

1 medium (150g)
apple, sliced

1/2 teaspoon
finely grated orange
rind
-
2 tablespoons
caster sugar

1/2 cup (75g)
self raising flour
-
1/4 cup (35g)
plain flour

2 tablespoons brown sugar
-
20g butter,
chopped
-
1 egg, lightly
beaten
-
2 tablespoons skim
milk
-
1/4 teaspoon
ground cinnamon
Method:

Drain
plums, reserve 2 tablespoons syrup. Halve
plums, remove stones. Combine apple, rind,
caster sugar and syrup in medium pan, bring
to boil; simmer, covered, 8 minutes,
stirring occasionally.

Stir in plums,
spoon into 1.5-litre (6-cup) ovenproof dish. Sift
flours into medium bowl, stir in brown sugar; rub in
butter. Stir in egg and milk.

Drop heaped
tablespoons of mixture around edge of dish, sprinkle
with cinnamon. Bake, uncovered, in moderate oven
about 30 minutes or until browned.
