Healthy Desserts Recipes - Lemon, Lime and Bitters Crush

Ingredients

  • 2 cups (440g) caster sugar

  • 2 cups (500ml) dry white wine

  • 2 cups (500ml) water

  • 1 1/2 cups (375ml) lemon juice

  • 1/2 cup (125ml) lime juice

  • 1 teaspoon Angostura Aromatic Bitters

  • 3 egg whites


Method:

  1. Combine sugar, wine and water in large heavy-based pan, stir over heat, without boiling, until sugar dissolves. Bring to boil; simmer, uncovered, without stirring, about 20 minutes, or until syrup is thickened slightly (syrup must not change color), cool to room temperature.

  2. Stir in juices and bitters. Pour mixture into 23cm square cake pan, cover with foil, freeze until firm.

  3. Beat lemon mixture in large bowl with electric mixer until smooth. Beat egg whites in small bowl with electric mixer until firm peaks form; fold egg whites into lemon mixture in 2 batches. Return mixture to pan, cover, freeze until firm.
