Healthy Desserts Recipes - Lemon Gelato with Sugared Pastry Twists 

Ingredients

  • 1/3 cup (80ml) water

  • 3/4 (165g) caster sugar

  • 1/4 cup (60ml) light corn syrup

  • 1 1/2 cups (375ml) water, extra

  • 1 tablespoon finely grated lemon rind

  • 1 1/2 cups (375ml) lemon juice

  • 1/2 sheet ready-rolled puff pastry

  • 20g butter, melted

  • 2 teaspoons cinnamon sugar

  • pinch ground clove


Method:

  1. Combine water, sugar and corn syrup in small pan, stir over heat, without boiling, until sugar dissolves. Bring to boil; simmer uncovered, without stirring, 4 minutes.

  2. Stir in extra water, rind and juice; pour mixture into 20 x 30cm lamington pan, cover with foil, freeze until just firm. Working quickly, transfer gelato mixture to large bowl; beat with electric mixer until smooth.

  3. Return mixture to lamington pan, cover, freeze again until firm. Repeat process once more. Serve in scoops with Sugared Pastry Twists.

  4. To make Sugared Pastry twists: Using a fluted pastry cutter, cut pastry width ways into 1 cm strips. Brush with butter, sprinkle with combined cinnamon sugar and clove. Twist into decorative shapes, place on non-stick oven tray. Bake in moderate oven about 8 minutes or until lightly browned; cool on wire rack.
