Healthy Desserts Recipes - Fruit and Yoghurt Crepes

Ingredients

  • 1/4 cup (35g) plain flour

  • 1/4 cup (40g) whole meal plain flour

  • 1 teaspoon caster sugar

  • 1 egg, lightly beaten 3/4 cup (180ml) skim milk

  • 2 teaspoons vegetable oil

  • 1 teaspoon finely grated lemon rind

  • cooking oil spray

  • 2 medium (400g) peaches

  • 250g strawberries

spiced yogurt

  • 1 1/2 cups (375ml) low-fat yogurt

  • 1 1/2 tablespoons brown sugar

  • 1 teaspoon finely grated lemon rind

  • 1/2 teaspoon ground cinnamon


Method:

  1. Sift flours and sugar into medium bowl, gradually whisk in combined egg, milk, oil and rind until smooth. Cover batter; refrigerate 30 minutes.

  2. Pour 2 to 3 tablespoons of batter into heated heavy-based crepe pan which has been coated with cooking oil spray; cook until lightly browned underneath. Turn crepe, brown other side. Repeat with remaining batter.

  3. Peel and slice peaches; cut strawberries into wedges. Divide fruit among crepes; fold crepes over fruit. Serve with Spiced yogurt.

  4. To make Spiced yogurt: Combine all ingredients in bowl; stir until smooth.
