Healthy Desserts Recipes - Apple Sponge 

Ingredients

  • 4 large (800g) apples

  • 1/4 cup (55g) caster sugar

  • 1/4 cup (80ml) water

sponge topping

  • 2 eggs

  • 1/3 cup (75g) caster sugar

  • 2 tablespoons corn flour

  • 2 tablespoons plain flour 

  • 2 tablespoons self raising flour


Method:

  1. Peel, core, quarter and slice apples, combine in large pan with sugar and water; cook, covered, about 10 minutes or until apples are tender.

  2. Spoon hot apple mixture into 1.5-litre (6-cup) deep 14cm round ovenproof dish; spread with Sponge Topping.

  3. Bake, uncovered, in moderate oven about 25 minutes. Serve drizzled with light cream, if desired.

  4. To make Sponge Topping: Beat eggs in small bowl with electric mixer about 7 minutes or until thick and creamy. Add sugar gradually, beating until dissolved between additions. Fold in sifted flours.

Note: It is important to have the apple mixture as hot as possible before topping with the sponge mixture. The heat from the apples starts the cooking process.
