Healthy Desserts Recipes - Apple Pinwheel Pudding 

Ingredients

  • cooking oil spray

  • 2 1/2 cups (375g) self-raising flour

  • 30g butter

  • 3/4 cup (180ml) skim milk, approximately

  • 2 tablespoons raspberry jam

  • 2 medium (300g) apples, peeled, grated

  • 3/4 cup (120g) chopped seeded dates

  • 1/2 teaspoon mixed spice

  • 1/3 cup (80ml) boiling water

  • 1 tablespoon golden syrup


Method:

  1. Coat 1-litre (4-cup) shallow ovenproof dish with cooking oil spray.

  2. Sift flour into large bowl, rub in butter. Add enough milk to make a soft dough. Knead dough gently on floured surface until smooth. Roll dough to 20 x 30cm rectangle.

  3. Spread with jam; top with combined apples, dates and spice; leaving a 3cm border along one long side. Starting from opposite long side; roll up tightly. Cut into 8 pieces. Arrange pieces, cut side up, in prepared dish. Pour over combined water and golden syrup.

  4. Bake, uncovered, in moderate oven about 40 minutes or until browned lightly and cooked through.
