Apple Brown Betty
Ingredients
cooking oil
spray
2 cups (140g)
stale breadcrumbs
4 large (800g)
apples
1 teaspoon finely
grated lemon rind
lemon syrup
1/2 cup (125ml)
golden syrup
1/4 cup (80ml) water
1/2 cup (110g)
caster sugar
1/4 cup (80ml) lemon juice
Method:
Coat 1.5-litre
(6-cup) shallow ovenproof dish with cooking oil
spray, sprinkle with a layer of breadcrumbs. Peel,
core and grate apples coarsely, combine with rind in
bowl.
Spread a layer of
apple mixture over breadcrumbs. Repeat layering,
finishing with breadcrumbs.
Pour hot Lemon
Syrup over apple and bread mixture. Bake, uncovered,
in slow oven about 1 1/4 hours or until lightly
browned. Serve warm with low-fat yogurt, if desired.
To make Lemon Syrup:
Combine golden syrup, water and sugar in medium pan,
stir over heat, without boiling, until sugar
dissolves, remove from heat; stir in juice.
