Fruits Dessert Recipe - Lemon Coconut Bars
Ingredients
BASE

1/2 cup (125ml) butter or
margarine, at room temperature

1/4 cup (60ml) sugar
-
1/2 tsp (2.5ml) vanilla extract
-
1 cup (250ml) self-rising lour
-
1/2 cup (125ml) shredded
coconut
TOPPING
-
1/4 cup (60ml) butter or
margarine, at room temperature
-
1/4 cup (60ml) condensed milk
-
juice and grated rind or 1
lemon
-
1 cup (250ml) icing sugar
-
1 cup (250ml) shredded coconut
Method:

TO
PREPARE BASE: Cream butter and sugar together. Blend
in remaining ingredients until well combined.

Press into a jelly roll pan. Bake at 350F (180C) for
20 minutes. While cooking, prepare topping.

TO
PREPARE TOPPING : Combine all ingredients for
topping. Spread over base while hot. Allow to set.
Cut into fingers.
