Fruits Dessert Recipe - Lemon Coconut Bars

Ingredients

BASE

  • 1/2 cup (125ml) butter or margarine, at room temperature

  • 1/4 cup  (60ml) sugar

  • 1/2 tsp (2.5ml) vanilla extract

  • 1 cup (250ml) self-rising lour

  • 1/2 cup (125ml) shredded coconut

TOPPING

  • 1/4 cup  (60ml) butter or margarine, at room temperature

  • 1/4 cup (60ml) condensed milk

  • juice and grated rind or 1 lemon

  • 1 cup (250ml) icing sugar

  • 1 cup (250ml) shredded coconut


Method:

  1. TO PREPARE BASE: Cream butter and sugar together. Blend in remaining ingredients until well combined.

  2. Press into a jelly roll pan. Bake at 350F (180C) for 20 minutes. While cooking, prepare topping.

  3. TO PREPARE TOPPING : Combine all ingredients for topping. Spread over base while hot. Allow to set. Cut into fingers.
