Fruits Dessert Recipe - Citrus and Mango Salad with Cream Dressing
Ingredients

1 head of lettuce, leaves
washed and dried
-
3 stalks celery, cut into 3
inch (8cm) pieces
-
16 oz (450g) can mango slices,
drained
-
3 oranges, peeled and segmented
-
1 cucumber, scored and thinly
sliced
-
6 green onions, thinly sliced
CREAM DRESSING:
-
5 tbsp (75ml) mayonnaise
-
1/2 cup (125ml) cream
-
salt and freshly ground black
pepper
-
3 tbsp (45ml) chopped parsley
-
1 tsp (5ml) Dijon mustard
-
1 tbsp (15ml) orange juice
-
2 tsp (10ml) lemon juice
Method:

Arrange lettuce leaves on a serving plate.

Make
celery curls by slicing the celery lengthwise
leaving once end uncut. Drop celery into ice water
until it curls.

Arrange mango slices, orange segments, celery curls
and cucumber on lettuce leaves. Garnish with green
onions. Refrigerate until ready to serve.

TO
MAKE DRESSING : Combine all ingredients. Let stand
for 15 to 20 minutes before using. Serve separately.
