1 lb (450g) Granny Smith
apples, peeled, cored, and sliced
5 tbsp (75ml) water
juice of 1/2 lemon
3/4 cup (185ml) butter
1/2 cup (125ml) brown sugar
3 1/2 cups (875ml) whole-wheat
flour
1 tsp (5ml) baking soda
1 tsp (5ml) ground cinnamon
1/2 tsp (2.5ml) ground nutmeg
1/2 tsp (2.5ml) ground mace
1/4 tsp (1ml) ground cloves
1 cup (250ml) chopped walnuts
1 cup (250ml) chopped dates
1/3 cup (85ml) raisins
1/4 cup (60ml) milk
TOPPING
1 tbsp (15ml) brown sugar
1/4 cup (60ml) chopped walnuts
1/2 tsp (2.5ml) cinnamon
Method:
Cook
apples over low heat in water and lemon juice until
soft. Mash with wooden spoon. Leave to cool.
Cream butter and sugar until light and fluffy. Sift
flour with baking soda and spices into creamed
mixture. Stir in, along with walnuts, dates,
raisins, apple and milk. Spoon into greased 5 x 13
inch (12 x 33cm) loaf pan.
TO
PREPARE TOPPING : Combine topping ingredients,
Sprinkle over cake. Bake at 350F (180C) for 1 1/4 to
1 1/2 hours. Leave to rest in pan for 15 minutes.
Turn out onto a wire rack to cool.
