Whitebait with Herb Sandwiches Recipe

 

Ingredients

  • unsalted butter, for spreading

  • 6 slices granny bread

  • 90ml/6 tbsp mixed chopped fresh herbs, such as parsley, chervil and chives

  • 450g/1 lb whitebait, defrosted if frozen

  • 65g/2 1/2 oz plain flour

  • 15ml/1 tbsp chopped fresh parsley

  • salt and cayenne pepper

  • groundnut oil, for deep-frying

  • lemon slices, to garnish

Serves 4


Method:

  1. Butter the bread slices. Sprinkle the herbs over three of the slices, then top with the remaining slices of bread. Remove the crusts and cut each sandwich into eight triangles. Cover with clear film and set aside.

  2. Rinse the white bait thoroughly. Drain and then pat dry on kitchen paper.

  3. Put the flour, chopped parsley, salt and cayenne pepper in a large plastic bag and shake to mix. Add the whitebait and toss gently in the seasoned flour until lightly coated. Heat the oil in a deep-fat fryer to 180C.

  4. Fry the fish in batches for2-3 minutes, until golden and crisp. Lift out of the oil and drain on kitchen paper. Keep warm in the oven until all the fish are cooked.

  5. Sprinkle the whitebait with salt and more cayenne pepper, if liked, and garnish with the lemon slices. Serve at once with the herb sandwiches.
