Tuna with Pan-fried Tomatoes Recipe

 

Ingredients

  • 2 tuna steaks (about 175g/6 oz each)

  • 90ml/6 tbsp olive oil

  • 30ml/2 tbsp lemon juice

  • 2 garlic cloves, chopped

  • 5ml/1 tsp chopped fresh thyme

  • 4 canned anchovy fillets, drained and chopped

  • 225g/8 oz plum tomatoes halved

  • 30ml/2 tbsp chopped fresh parsley

  • 4-6 black olives, stoned and chopped

  • pinch of ground black pepper

  • crusty bread, to serve

Serves 2


Method:

  1. Place the tuna steaks in a hallow non-metallic dish. Mix 60ml/4 tbsp of the oil with the lemon juice, garlic, thyme, anchovies and pepper. Pour this mixture over the tuna and leave to marinate for at least 1 hour.

  2. Lift the tuna from the marinade and place on a grill rack. Grill for 4 minutes on each side, or until the tuna fells firm to touch, basting with the marinade. Take care not to overcook.

  3. Meanwhile, heat the remaining oil in a frying pan and fry the tomatoes for a maximum of 2 minutes on each side.

  4. Divide the tomatoes equally between two serving plates and scatter the chopped parsley and olives over them. Top each with a tuna steak.

  5. Add the remaining marinade to the pan juices and warm through. Pour over the tomatoes and tuna steaks and serve at once with crusty bread for mopping up the juices.

Notes: If you are unable to find fresh tuna steaks, you could replace them with salmon fillets, if you wish-just grill them for one or two minutes more on each side.
