Preheat the oven to 200C. Mix together the carrots
and courgettes. Stir in the breadcrumbs, lime juice
and season with salt and pepper.
Lay the fish fillets skin-side up and divide the
stuffing between them, spreading it evenly.
Roll up to enclose the stuffing and place in an
ovenproof dish. Cover and bake for about 30minutes,
or until the fish flakes easily. Serve hot with new
potatoes.
