Sole Goujons with Lime Mayonnaise Recipe

 

Ingredients

  • 675g/1 1/2 lb sole fillets, skinned

  • 2 eggs, beaten

  • 115g-4 oz fresh white breadcrumbs

  • oil, for deep-frying

  • salt and ground black pepper

  • lime wedges, to serve

For the mayonnaise

  • 200ml/7 fl oz mayonnaise

  • 1 small garlic clove, crushed

  • 10ml/2 tsp capers, rinsed and chopped

  • 10ml/2 tsp chopped gherkins

  • finely grated rind of 1/2 lime

  • 10ml/2 tsp lime juice

  • 15ml/1 tbsp chopped fresh coriander

Serves 4


Method:

  1. To make a lime mayonnaise, mix together the mayonnaise, garlic, capers, gherkins, lime rind and juice and chopped coriander. Season to taste with salt and pepper. Transfer to a serving bowl and chill until required.

  2. Cut the sole fillets into finger-length strips. Dip into the beaten egg, then into the breadcrumbs.

  3. Heat the oil in a deep-fat fryer to 180C. Add the fish in batches and fry until golden brown and crisp. Drain well on kitchen paper.

  4. Pile the goujons on to warmed serving plates and serve with the lime wedges for squeezing over. Hand the lime mayonnaise round separately.

Notes: Make sure you use good quality mayonnaise for the sauce, or-better still-make your own. But remember that some people, including pregnant women, should not eat raw egg.
