Prawn and Mint Salad Recipe

 

Ingredients

  • 12 large green prawns

  • 15g/1/2 oz unsalted butter

  • 15ml/1 tbsp fish sauce

  • juice of 1 lime

  • 45ml/3 tbsp thin coconut milk

  • 2.5cm/1 in piece of root ginger, peeled and grated

  • 5ml/1 tsp caster sugar

  • 1 garlic clove, crushed

  • 2 fresh red chilies, seeded and finely chopped

  • 30ml/2 tbsp fresh mint leaves

  • ground black pepper

  • 225g/8 oz light green lettuce leaves, such as butter head, to serve 

Serves 4


Method:

  1. Peel the prawns, leaving the tails intact.

  2. Melt the butter in a large frying pan and toss in the green prawns until they turn pink.

  3. Mix the fish sauce, lime juice, coconut milk, ginger, sugar, garlic, chilies and pepper together.

  4. Toss the warm prawns into the sauce with the mint leaves. Serve the prawn mixture on a bed of green lettuce leaves.

Notes: For a really tropical touch, garnish this flavorsome salad with some shaving of fresh coconut made using a potato peeler.
