Prawn and Mint Salad Recipe
Ingredients

12 large green prawns
-
15g/1/2 oz unsalted butter
-
15ml/1 tbsp fish sauce
-
juice of 1 lime
-
45ml/3 tbsp thin coconut milk
-
2.5cm/1 in piece of root ginger, peeled and
grated
-
5ml/1 tsp caster sugar
-
1 garlic clove, crushed
-
2 fresh red chilies, seeded and finely chopped
-
30ml/2 tbsp fresh mint leaves
-
ground black pepper
-
225g/8 oz light green lettuce leaves, such as
butter head, to serve
Serves 4
Method:

Peel the prawns, leaving the tails intact.

Melt the butter in a large frying pan and toss in
the green prawns until they turn pink.

Mix the fish sauce, lime juice, coconut milk,
ginger, sugar, garlic, chilies and pepper together.
-
Toss the warm prawns into the sauce with the mint
leaves. Serve the prawn mixture on a bed of green
lettuce leaves.
Notes: For a really
tropical touch, garnish this flavorsome salad with
some shaving of fresh coconut made using a potato
peeler.
