Pickled Herrings Recipe

 

Ingredients

  • 4 fresh herrings

  • 160ml/5 fl oz white wine vinegar

  • 2 tsp salt

  • 12 black peppercorns

  • 2 bay leaves

  • 4 whole cloves

  • 2 small onions, sliced

For the dressing

  • 1 tsp coarse grain mustard

  • 3 tbsp olive oil

  • 1 tbsp white wine vinegar

  • salt and ground black pepper

Serves 4


Method:

  1. Pre-heat the oven to 160C/325F/Gas 3. Clean and bone the fish. Cut each fish into two fillets.

  2. Roll up the fillets tightly and place them closely packed together in an ovenproof dish so that they can't unroll.

  3. Pour the vinegar over the fish and add just enough water to cover them.

  4. Add the spices and onion, cover and cook for 1 hour. Leave to cool with the liquid. To make the dressing, combine all the ingredients and shake well; serve with the fish.
