Pan-fried Garlic Sardines Recipe

 

Ingredients

  • 1.1kg/2 1/2 lb fresh sardines

  • 30ml/2 tbsp olive oil

  • 4 garlic cloves

  • finely grated rind of 2 lemons

  • 30ml/2 tbsp chopped fresh parsley

  • salt and ground black pepper

For the tomato bread

  • 8 slices crusty bread, toasted

  • 2 large ripe beefsteak tomatoes

Serves 4


Method:

  1. Cut and clean the sardines thoroughly

  2. Heat the oil in a frying pan and cook the garlic cloves until they are softened.

  3. Add the sardines and fry for 4-5 minutes. Sprinkle the lemon rind, parsley and seasoning over the top.

  4. Cut the tomatoes in half and rub them on to the toast. Discard the skins. Serve the sardines with the tomato toast.

Notes: Make sure you use very ripe beefsteak tomatoes for this dish so they will rub on to the roast easily.
