Moroccan Fish Tagine Recipe

 

Ingredients

  • 2 garlic cloves, crushed

  • 30ml/2 tbsp ground cumin

  • 30ml/2 tbsp paprika

  • 1 small fresh red chili (optional)

  • 30ml/2 tbsp tomato puree

  • 60ml/4 tbsp lemon juice

  • 4 whiting or cod cutlets (about 175g/6 oz each)

  • 350g/12 oz tomatoes, sliced

  • 2 green peppers, seeded and thinly sliced

  • salt and ground black pepper

  • chopped fresh coriander, to garnish

Serves 4


Method:

  1. Mix together the garlic, cumin, paprika, chili, tomato puree and lemon juice. Spread this mixture over the fish, then cover and chill in the fridge for about 30 minutes to let the flavors penetrate.

  2. Preheat the oven to 200C/400F/Gas 6. Arrange half of the tomatoes and peppers in a baking dish.

  3. Cover with the fish, then arrange the remaining tomatoes and peppers on top. Cover the baking dish with the foil and bake for about 45 minutes, until the fish is tender. Sprinkle with chopped coriander or parsley to serve.

Notes : Try different white fish in this dish, such as hoki or Pollack. If you are preparing this dish for a dinner party, it can be assembled completely and stored in the fridge until you are ready to cook it.
