Grilled Salmon Steaks with Fennel Recipe

 

Ingredients

  • juice of 1 lemon

  • 45ml/3 tbsp chopped fresh fennel, or the green fronds bulb

  • 5ml/1 tsp fennel seeds

  • 45ml/3 tbsp olive oil

  • 4 salmon steaks of the same thickness (about 700g/1 1/2 lb)

  • salt and ground black pepper

  • lemon wedges, to garnish

Serves 4


Method:

  1. Combine the lemon juice, chopped fennel and fennel seeds with the olive oil in a bowl. Add the salmon steaks, turning them to coat them with the marinade. Sprinkle with salt and ground black pepper. Cover and place in the fridge. Allow to stand for about 2 hours.

  2. Preheat the grill. Arrange the fish in one layer on a grill pan or shallow baking tray. Grill about 10cm/4 in from the heat source for 3-4 minutes.

  3. Turn the steaks over and spoon on the remaining marinade. Grill for 3-4 minutes, or until the edges begin to brown. Serve hot, garnished with lemon wedges.

Notes: If you wish, remove the skin from the salmon steaks before serving. Simply insert the prongs of a fork between the flesh and the skin at one end and roll the skin around the prongs in a fluent action.
