Fish Balls in Tomato Sauce Recipe

 

Ingredients

  • 450g/1 lb hoki or other white fish fillets, skinned

  • 60ml/4 tbsp fresh whole meal breadcrumbs

  • 30ml/2 tbsp snipped chives or spring onion

  • 400g/14 oz can chopped tomatoes

  • 50g/2 oz button mushrooms, sliced

  • salt and ground black pepper

Serves 4


Method:

  1. Cut the fish fillets into chunks; place in a food processor. Add the breadcrumbs, chives or spring onion. Season and process until the fish is chopped, but still with some texture.

  2. Dived the fish mixture into about 16 even-sized pieces, then mould them into balls with your hands.

  3. Place the tomatoes and mushrooms in a saucepan; cook over a medium heat until boiling. Add the fish balls, cover and simmer for about 10 minutes until cooked. Serve hot.
