Cut the cod fillets into bite-size chunks and
sprinkle with the lime or lemon juice.
Heat the oil in a large, non-stick frying pan and
fry the onion and pepper gently until softened. Add
the cayenne pepper and garlic salt.
Stir in the cod and the chopped tomatoes. Bring to
the boil, then cover and simmer for about 5 minutes,
or until the fish flakes easily. Serve with boiled
rice or potatoes.
