Cod Creole Recipe

 

Ingredients

  • 450g/1 lb cod fillets, skinned

  • 15ml/1 tbsp lime or lemon juice

  • 10ml/2 tsp olive oil

  • 1 onion, finely chopped

  • 1 green pepper, seeded and sliced

  • 2.5ml/1/2 tsp cayenne pepper

  • 2.5ml/1/2 tsp garlic salt

  • 500g/14 oz can shopped tomatoes

  • boiled rice or potatoes, to serve

Serves 4


Method:

  1. Cut the cod fillets into bite-size chunks and sprinkle with the lime or lemon juice.

  2. Heat the oil in a large, non-stick frying pan and fry the onion and pepper gently until softened. Add the cayenne pepper and garlic salt.

  3. Stir in the cod and the chopped tomatoes. Bring to the boil, then cover and simmer for about 5 minutes, or until the fish flakes easily. Serve with boiled rice or potatoes.

Notes: This flavorsome dish is surprisingly light in calories, so if you are worried about your waistline, this is the meal for you.
