Passion Fruit Cram Wafers
Ingredients
extra light olive
oil, for deep-frying
12 won ton
wrappers
icing sugar, to
dust
Filling
200g firm ricotta
1/3 cup (80ml)
cram
1 tablespoon
icing sugar
Sauce
1/2 cup (125g)
fresh passion fruit pulp
1/2 cup (125ml)
maple syrup
2 tablespoons
lemon juice
Method:
Fill a deep
heavy-based saucepan one third full of oil and heat
until a cube of bread dropped into the oil browns in
15 seconds. Cook the wrappers two a at time (they
expand when cooked) for 30 seconds, or until puffed
and golden. Turn once during cooking. Drain on
crumpled paper towels until cool.
To make the
filling, place the ricotta, cream and icing sugar in
a food processor and process until smooth. Cover and
refrigerate until ready to use.
To make the
sauce, place the passion fruit pulp, maple syrup and
lemon juice in a bowl and mix together.
To assemble,
place 1 teaspoon of the ricotta mixture on each
serving plate )this will help to stabiles the won
tons). Position a won ton on the ricotta, then top
with 2 tablespoon of the ricotta mixture and drizzle
with 1 tablespoon of the passion fruit sauce.
Repeat with the
remaining ingredients to give two layers and top
with a third won ton wrappers. Dust with icing sugar
and spoon a little extra passion fruit sauce around
the plate.
