Fast Desserts Recipes - Mixed Berry Millefeuille
Ingredients

1 sheet ready-rolled puff
pastry, thawed

150 g sour cream

2 tablespoons soft brown sugar

2 tablespoons cream

200 g mixed fresh or frozen
berries

icing sugar, to dust
Method:

Preheat the oven to
moderately hot
200°C
(400°F/Gas 6). Line a
baking tray with baking paper.

Cut the pastry
sheet into eight 6 x 12
cm rectangles, place on the prepared tray and bake
for 10 minutes, or until the pastry is puffed and
lightly golden. Set aside to cool. (If you lightly
flatten the puffs with your hand, the cream will sit
better.)

Place the sour
cream, soft brown sugar and cream in a bowl and beat
until stiff peaks form. Divide into four portions
and spoon one portion each onto the flat side of
four of the pastry puffs. Top with the mixed berries
and cover with the four pastry tops, puffed side-up.
Dust generously with icing sugar and serve
immediately.
Note: Millefeuille is a
French term that literally means a thousand leaves or a
thousand sheets, which refers to the many layers of the
puff pastry.
Hint: To save time on the
day, you can make the pastry puffs ahead of time and
store them in an airtight container so that they remain
crisp.
