Ingredients
1 green apple
125 g butter
1/2 cup (115 g) firmly packed soft brown sugar
1 teaspoon grated lemon rind
1/3 cup (90 g) caster sugar
2 eggs, lightly beaten
1
cup (125 g) selfraising flour
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground allspice
1/4 cup (60 ml) milk
1/2 cup (125 ml) sweet apple cider or apple juice
1/4 cup (60 ml) cream
Method:
Preheat
the oven to moderate 180°C (350°F/Gas4).
Lightly grease six 3/4 cup (185 ml) muffin
holes and line the base of each with baking
paper.
Peel and core the
apple and cut into thin slices. Heat 25 g of the
butter in a saucepan
over low heat. Add the apple and brown sugar and
stir for 3-4 minutes, or until the sugar dissolves
and the apple is soft and golden. Remove from the
heat, then lift out the apple with a fork or slotted
spoon, reserving the liquid. Place the apple in the
muffin holes.
Beat the
remaining butter until very soft and creamy. Add the
rind and caster sugar and beat until light and
fluffy. Gradually add the egg, beating well after
each addition. Using a metal spoon, fold in the
sifted flour and spices alternately with the milk.
Spoon the batter
over the apple and bake for 20 minutes. Leave for
2-3 minutes before turning out.
Meanwhile, to
make the cider sauce, place the saucepan with the
reserved syrup over medium heat. Add the cider and
simmer for 5 minutes, or until reduced. Stir in the
cream and simmer for 1-2 minutes, or until the sauce
is hot. Drizzle the sauce over the puddings and
serve with cream.
