Fast Desserts Recipes - Champagne Strawberries

Ingredients

  • 1/4 cup (60 g) caster sugar

  • 1 vanilla bean, split lengthways

  • 300 ml Champagne

  • 500 g fresh strawberries


Method:

  1. Place the sugar, vanilla bean and Champagne in a saucepan and warm over low heat. Cook, stirring, for 3 minutes, or until the sugar has completely dissolved. Cool slightly.

  2. Put the strawberries in a serving bowl and pour the Champagne syrup over them, stirring gently to coat. Serve warm or refrigerate until cold, if preferred.

Note: For a dinner party, serve the strawberries in individual martini glasses with a couple of biscotti.
