Fast Desserts Recipes - Apricot Fool
Ingredients

200 g packet
dried apricots large

strip of lemon peel, pith
removed

300 ml cream

1 1/2 tablespoons caster sugar

1 teaspoon lemon juice
Method:

Place the apricots,
lemon peel and 1 cup (250 ml) water in a
small saucepan. Simmer
for 15
minutes, or until the apricots are plump.

Meanwhile, pour the cream
into a bowl and, using electric beaters,
whip until
soft peaks form.

Add the sugar and
lemon juice to the apricots and stir well. Remove
the lemon peel. Place in a food processor or blender
and process until pureed, then transfer to a metal
or glass bowl and sit over iced water to quickly
cool the apricot mixture. Stir frequently until
cool.

Gently fold in
the whipped cream and spoon the mixture into
tumblers. Delicious served with wafers.
Note: A fool is a fruit puree into which
whipped cream or custard is mixed. Variation: For a
delicious mango fool, puree 3 large ripe mangoes and 1
cup (250 ml) ready-made custard in a food processor or
blender until smooth, then gently fold in 1 2/3 cups (410
ml) whipped cream.
