Chinese Desserts Recipes - Snow Balls

Ingredients

  • 1 firm ripe mango, peeled and cut in 3/4 inch (2cm) cubes

  • 3 slices ripe fresh pineapple, peeled and cut 3/4 inch (2cm) cubes

  • 1 large apple, peeled and cut in 3/4 inch (2cm) cubes

  • 3 kiwi fruit, peeled and cut in 3/4 inch (2cm) cubes

  • 3 firm bananas, peeled and cut in 3/4 inch (2cm) cubes

  • 1/2 lb (225g) strawberries

  • 1 tbsp (15ml) orange liqueur

  • 6-8 large spring roll wrappers

  • 1 egg white, beaten

  • vegetable oil, for frying

  • icing sugar

  • vanilla ice cream


Method:

  1. Combine fruit in a bowl. Sprinkle with liqueur and stand 15 minutes; drain. Divide fruit between spring roll wrappers. Brush edges with egg white. Roll up as for ordinary spring rolls.

  2. Fry three rolls at a time in oil to cover. When golden, remove and drain well.

  3. Dust with icing sugar and serve with ice cream.
