Chinese Desserts Recipes - Almond And Cashew Nut Cookies

Ingredients

  • 1 cup (250ml) shortening

  • 1 cup (150ml) white sugar

  • 1 egg, beaten

  • 3 tbsp (45ml) ground almonds

  • 3 tbsp (45ml) ground cashew nuts

  • 0.5 tsp (2.5ml) vanilla extract

  • 0.5 tsp (2.5ml) almond extract

  • 2.5 cups (625ml) all-purpose flour

  • 1.5 level tsp (7.5ml) baking powder

  • pinch salt 


Method:

  1. Cream a shortening and sugar together in a bowl. Add vanilla, egg, almond extract, almonds and cashews.

  2. Sift flour, baking salt and powder and together. Now, knead lightly and fold into creamed mixture. Shape the dough into nicely walnut-sized balls. Arrange on a lightly greased baking sheets and then Press each ball with a fork to in order to flatten slightly.

  3. Bake at 400F (200C) until pale golden, 15-20 minutes.
