Chinese Desserts Recipes - Almond And Cashew Nut Cookies
Ingredients
1 cup (250ml) shortening
1 cup (150ml) white sugar
1 egg, beaten
3 tbsp (45ml) ground almonds
3 tbsp (45ml) ground cashew
nuts
0.5 tsp (2.5ml) vanilla extract
0.5 tsp (2.5ml) almond extract
2.5 cups (625ml) all-purpose
flour
1.5 level tsp (7.5ml) baking
powder
pinch salt
Method:
Cream a shortening and sugar together in a bowl. Add
vanilla, egg, almond extract, almonds and cashews.
Sift
flour, baking salt and powder and together. Now,
knead lightly and fold into
creamed mixture. Shape the dough into
nicely walnut-sized balls. Arrange on a lightly greased
baking sheets and then Press each ball with a fork to
in order to
flatten slightly.
Bake
at 400F (200C) until pale golden, 15-20 minutes.
