Decorative Cakes Recipes -  Basics (Pastillage)

Ingredients

  • 450g/1 lb icing sugar

  • 125g/4 oz corn flour

  • 2 tsp gun tragacanth

  • 2 leaves of gelatin

  • 1 tsp liquid glucose


Method:

  1. Sift the icing sugar, corn flour and gum tragacanth together into a bowl. Dissolve the gelatin in 5 tablespoons water, add the glucose and then add the liquid to the dry ingredients.

  2. Beat well to form  paste, the knead until smooth . Keep in a plastic bag until required.
