Chocolate Desserts Recipe - Petits Pots au Chocolate

Ingredients

  • 4 oz (110g) dark or semisweet baking chocolate

  • 2 1/2 cups (625ml) milk

  • 2 eggs

  • 2 egg yolks

  • 3 tbsp (45ml) granulated sugar

  • 2 tsp (10ml) rum

  • 1/2 cup (125ml) whipping cream


Method:

  1. Preheat oven to 325F (170C). Grate one square of chocolate for decoration and reserve. Place milk in a saucepan with remaining chocolate and heat to melt it.

  2. Beat eggs, egg yolks and sugar together until light then pour in the hot but not boiling milk, stirring all the time. Stir in rum, them strain mixture into 6 individual ovenproof dishes.

  3. Stand dishes in a roasting pan half-filled with hot water, bake for 40-60 minutes or until custard lightly set.

  4. Serve hot or cold, decorated with whipped cream and grated chocolate.
