Chocolate Desserts Recipe - Coffee Cups

Ingredients

  • 2 1/2 cups (625ml) milk

  • 1/3 cup (85ml) semolina

  • 1 tbsp (15ml) instant coffee

  • 1/2 cup (125ml) sugar

SAUCE

  • 1/4 cup (60ml) brown sugar

  • 2/3 cup (165ml) milk

  • 5 tbsp (75ml) cocoa powder


Method:

  1. Warm milk in a pan, then sprinkle in semolina, coffee and sugar. Bring to a boil, stirring continuously and still stirring, cook for a few more minutes until mixture thickens.

  2. Divide mixture between four 2/3 cup (165ml) molds than have been rinsed in cold water. Leave to cool and set.

  3. Place all sauce ingredients in a pan. Stir over low heat to dissolve sugar and then coil for a few minutes, stirring continuously until sauce becomes smooth and thick. Serve hot or cold, over turned-out molds.

Note : If you don't have suitable molds, tea cups will do instead. A delicious way of jazzing up this pudding is to stir 1 1/2 tbsp (20ml) of Tia Maria, Creme de Cocoa or brandy into the sauce before pouring it over the molds.
