Meat Recipes - Fillet Steak Chinese Style
Ingredients

3/4 lb (340g) piece beef fillet
-
1 tbsp (15ml) soy sauce

1 tbsp (15ml) hoisin sauce
-
1 tbsp (15ml) dry sherry
-
pinch fives - spice powder
-
3 tbsp (45ml) vegetable oil
-
1/4 tsp (1ml) salt
-
1 large onion, peeled and cut
into eighths

1/2 tsp (2.5ml) chopped fresh
ginger
-
1 tsp (5ml) chopped garlic1
level tbsp (15ml) cornstarch
-
1/4 cup (60ml) beef stock
-
1/2 tsp (2.5ml) sesame oil
-
green onion tops, to serve
Method:

Freeze beef briefly until firm, then cut into thin
slices.

Combine beef, soy and hoisin sauces. sherry and
fives - spice, and marinate for 15 minutes. Remove
beef and set marinade aside.

Heat
1 tbsp (15ml) oil in a pan. Add salt and onion and
stir-fry 1 minute. Remove onion with a slotted spoon
and set aside. heat remaining oil in pan and add
ginger, garlic and beef. Stir-fry 1-2 minutes, until
beef just loses its pinkness. Do not overcook or it
will become tough. Return onion to pan.

Blend cornstarch and stock and stir in to thicken.
Sprinkle sesame oil on top and serve garnished with
sliced top of green onions.
