Meat Recipes - Deep Char Sui

Ingredients

  • 1 2/3 lb s( 750g) boneless pork

  • 1 1/2 tbsp (20ml) honey combined with 1 1/2 tbsp (20ml) hot water

MARINADE

  • 3 tbsp (45ml) soy sauce

  • 2 tbsp (30ml) dry sherry

  • 1/4 cup (60ml) hoisin sauce

  • 1 tsp (5ml) fives - spice powder

  • 1 tsp (5ml) sesame paste

  • 1 tsp (5ml) brown sugar

  • 1 slice fresh ginger

  • 1 clove garlic, crushed

  • 3 tbsp (45ml) vegetable oil

  • dash red food coloring


Method:

  1. TO MAKE MARINADE: Combine marinade ingredients in bowl.

  2. Cut pork into strips 1 1/4 x 6 inches (3 x 15cm). Pierce all over with a skewer. Add to marinade, stirring to coat. Let stand 1 hour or overnight in refrigerator.

  3. Roast pork Chinese style on a rack over a pan of water, at 400F (200C) for 15 minutes. Baste with marinade. reduce heat at 350F (180C) . Roast a further 10 minutes.

  4. Brush pork with honey mixture on each side, and continue cooking for 10 minutes. Slice pork thinly. Serve hot or cold or in combination recipes.
