Meat Recipes - Cantonese Beef

Ingredients

  • 5 tbsp (75ml) vegetable oil

  • 2 medium onions, peeled and finely shredded

  • 4 large tomatoes, peeled, cut in eights

  • 1 tsp (5ml) sugar

  • 1/2 tsp (2.5ml) salt

  • 1 tbsp (15ml) fermented black beans, chopped

  • 1 tsp (5ml) chopped fresh ginger

  • 1 tsp (5ml ) chopped garlic

  • 1 lb (450g) boneless steak cut in thin strips

  • 3 tbsp (45ml) soy sauce

  • 1 cup (250ml) beef stock

  • 1 1/2 tbsp (20ml) cornstarch blended with 2 1/2 tbsp (40ml) stock or water

  • green tips of green onions, sliced


Method:

  1. Heat 3 tbsp (45ml) oil. Add onions, stir-fry 2 minutes. Add tomatoes, sugar and salt; stir-fry 1 minute. Cover and cook until tomatoes are just tender and retain shape. Remove to a bowl.

  2. Heat remaining oil, add black beans, ginger and garlic, Stir-fry 1 minute. Add beef and cook over high heat until color changes, 2-3 minutes. Add beef stock, tomato mixture and soy sauce.

  3. By not breaking tomato pieces, stir in blended cornstarch and stock to thicken, Serve garnished with green onion tops.
