Meat Recipes - Braised Northern Lamb

Ingredients

  • 1 lb (450g) boneless lamb

  • 1/4 cup (60ml) soy sauce

  • 1/4 cup (60ml) dry sherry

  • 1 tbsp (15ml) sugar

  • 1 tsp (5ml) sugar

  • 1 tsp (5ml) fives - spice powder

  • 3 tbsp (45ml) vegetable oil

  • 1 tsp (5ml) chopped garlic

  • 1 5sp (5ml) chopped fresh ginger

  • 1 medium onion, cut in 3/4 inch (2cm) cubes

  • 1 tsp (5ml) Szechuan peppercorns, ground

  • 2 cups (500ml) stock

  • 3 potatoes, peeled and cut in 1 inch (2.5cm) cubes


Method:

  1. Combine lamb, soy sauce, sherry, sugar and fives - spice powder. Marinate 1 hour. Turn lamb pieces occasionally. Drain lamb, reserving marinade.

  2. Heat oil in a pan. add lamb and fry until golden and sealed on all sides.

  3. Add garlic, ginger, onion and peppercorn. Stir-fry 2 minutes. Add reserved marinade and stock to cover. Bring to a boil. Simmer covered 1 1/2 hours.

  4. Add diced potatoes, and continue cooking 30 minutes or until tender.
