Dim Sum Appetizer - LYCHEE

Ingredients

  • 20 oz (565g) can of lychee fruit, drained

  • 1 tbsp (15ml) salted cashews, finely chopped

  • 2 ½ oz (75g) crabmeat, canned or freshly cooked

  • 1 tbsp (15ml) mayonnaise

  • 1 tsp (5ml) light soy sauce

  • 1 green onion, finely cut

  • 2 tsp (10ml) lemon juice, strained 

  • Red ginger or red pepper, for garnish shredded lettuce


 

 Method:   

  1. Combine cashews, crabmeat, mayonnaise, light soy sauce, green onion and lemon juice. Pack into lychee fruit.  

  2. Top each with a thin slice of red ginger or red pepper. Arrange on finely shredded lettuce and serve chilled.
