Brunches Recipes - Waffles and Maple Syrup with Ricotta

Ingredients

  • 200 g (7 oz) plain (all-purpose) flour

  • 1 1/2 tablespoons caster (superfine) sugar

  • 1 tablespoon baking powder

  • 50 g (1 3/4 oz) rolled oats

  • 1 egg yolk

  • 350 ml (1 1/3 cups) milk

  • 2 teaspoons butter, melted

  • 3 egg whites

  • 100 g (3 1/2 OZ) ricotta cheese

  • 2 tablespoons vanilla yoghurt

  • 3 tablespoons maple syrup, plus extra


Method:

  1. Sift the flour, sugar, baking powder and 1/2 teaspoon salt into a bowl. then stir in the oats. Add the combined egg yolk and milk with the butter and mix.

  2. Whisk the egg whites in a clean, dry bowl until soft peaks form, then gently fold into the batter with a metal spoon. Cover and leave for I hour. Beat together the ricotta, yoghurt and maple syrup until smooth.

  3. Preheat a waffle maker. Pour a sixth of the mixture into the waffle maker and cook for 2-3 minutes. Repeat with the rest of the mixture to make six waffles. To serve, put each waffle on a plate, top with some ricotta mixture and drizzle with the extra maple syrup.
