Pineapple and Coconut Iced Drink
Ingredients
500 ml (2 cups)
fresh pineapple juice
250 ml (1 cup) coconut milk
mint leaves, to
garnish
pineapple leaves,
to garnish
Method:
Combine the
pineapple juice with the coconut milk in a large jug
and mix well. Pour 1.25 ml (1/2 cup) of the mixture
into eight holes of an ice cube tray and freeze.
Chill the remaining mixture in the refrigerator.
When the the ice
cubes have frozen, pour the chilled juice mixture
into two glasses, add the frozen cubes and garnish
with the mint and pineapple leaves.
