Ingredients
160 g (1 cup)
chopped mixed dried fruits
225 g (11/2 cups) whole meal self-raising flour
1 teaspoon baking
powder
150 g (1 cup)
unprocessed oat bran
60 g (1/3 cup)
soft brown sugar
290 ml (10 fl oz)
skim milk
1 egg
1 tablespoon oil
Method:
Preheat the oven
to 180°C (350°F/ Gas 4). Grease twelve 125 ml (1/2
cup) muffin holes. Soak the dried fruit in a bowl
with 3 tablespoons boiling water for 5 minutes.
Sift the flour
and baking powder into a large bowl. returning the
husks to the bowl. Stir in the oat bran and sugar
and make a well in the centre.
Combine the milk.
egg and oil in a jug. Add the soaked fruit and milk
mixture all at once to the dry ingredients. Fold in
gently using a metal spoon. until just combined.
Divide evenly
among the muffin holes. Bake for 20 minutes, or
until golden and a skewer inserted into the centre
comes out clean. Cool for a few minutes in the tin,
then turn out onto a wire rack.
