Chinese Recipes - Sweet and Sour Cucumber Recipe

Ingredients
- 1 medium-large cucumber
- 3 slices root ginger
- 9 ml (1 3/4 teaspoons) salt
- 15 ml (1 tablespoon) sesame oil
- 22 ml (1 1/2 tablespoons) sugar
- 22 ml (1 1/2 tablespoons) wine vinegar
Serve 4-6

Method:

Cut the cucumber into medium-sized sections. Cut each section vertically do half. Scrape away any seeds and pulp. Now cut each section of cucumber vertically into 3-4 strips.

Finely chop or grate the ginger. Rub the cucumber pieces with the salt, ginger, and sesame oil. Leave them to season for 30 minutes.

Meanwhile mix the sugar and vinegar in a bowl until well blended. Pour mixture over the cucumber, turn, the pieces until well coated and rearrange them neatly before serving.
Note: An excellent side-dish with any rice or succulent food.
