Chinese Recipes - Stir-Fried Spring Greens in Oyster Sauce Recipe
Ingredients
- 675 g (1 1/2 lb) spring greens (or spring cabbage)
- 45 ml (3 tablespoons) vegetable oil
- 5 ml (1 teaspoon) salt
- 15 ml (1 tablespoon) soy sauce
- 30 ml (2 tablespoons) stock
- 15 ml (1 tablespoon) oyster sauce
- 15 ml (1 tablespoon) lard (use oil if not available)

Method:

Eliminate the tough and discolored leaves and roots of the spring greens and cut the remaining leaves into medium-sized slices.

Heat the oil in a very’ large saucepan or frying pan, tilting the pan so that the oil covers the whole surface. Add the spring greens. Sprinkle with salt, and turn in the oil over a medium heat.

Stir-fry them for 2 minutes. Add the lard and other ingredients, turn the vegetables in the melting fat and sauce until all the leaves are glossy (1 1/2 minutes). Serve on a well-heated dish.
Note: Excellent with meat dishes, the green of the vegetable contrasts well with the rich brown of the meat.
